Lemon myrtle is probably the most popular of the ‘holy trinity’ of three native Australian myrtles (two other being cinnamon and anise myrtles), and also quite commonly used in our local gin distilling process. A great and beautiful alternative to lemon peel, with a softer and sweeter lemon character, which is almost like a lemonade ice-pole! Amazing as a garnish, bringing any citrus gin to life with its delicate aroma.
